Spareribs adobo
I’m sure there are much more authentic ribs adobo recipes out there, but this one tastes really good:
1 slab of ribs (2 - 3 lbs); have butcher cut in half
1 cup white vinegar
1/2 cup soy sauce
1 head of garlic
1 Tbs vegetable oil
Cut ribs to separate; peel cloves of garlic. Put ribs & garlic in a shallow container (non-metal), and marinate in the vinegar and soy sauce for two hours or more. Stir occasionally (every half-hour or so).
Put this mixture in a pot to simmer, covered, for 1/2 hour or so.
Remove ribs from pot, and fry them over medium heat until they are browned. Put them back in the pot with the juices for 5 - 10 minutes.
Serve with rice, pouring some of the juice over the rice.
It’s pretty simple! If it comes out right, the ribs are nice and juicy.
